Prepare the Berries: Hull and chop any large strawberries, then combine them with raspberries and blueberries in a bowl. Sprinkle icing sugar over the berries and gently mash with a fork. Set aside to macerate.
Layer the Madeleines: Arrange the Madeleines at the bottom of a large trifle bowl, filling any gaps. Optionally, drizzle Marsala wine over them for added flavour. Once the berries are juicy, spoon half of them, along with their juice, over the cake and let it soak in.
Add the Custard and Mascarpone: Whip together the custard and mascarpone until smooth. Spoon half of this mixture over the berries, spreading it to the edges. Then, add the remaining berries on top and cover with the remaining custard.
Whip the Cream: Whip the cream to soft peaks. Spoon 2/3 of the whipped cream over the trifle and level it.
Create the Union Jack Pattern: Use extra berries to form a Union Jack pattern on top, leaving gaps between each colour. Use a narrow piping tip to pipe the remaining cream between the berries, creating the white parts of the flag.
