Berry Heavenly Graveyard Pudding
These ghoulish puddings are scarily good. The indulgent mousse is perfectly complemented by fresh berries so not only do they make a big impact, they taste out of this world too.
Reserve 12 blackberries and mash the rest in a bowl with a fork. Set a fine sieve over a bowl, tip in the mashed berries, using the back of a spoon to push them through the sieve. Discard the remains in the sieve and set the puree aside.
Break the chocolate into a large bowl. If you use dark chocolate, add sugar at this point, it’s not so necessary if you use milk chocolate. Gently warm the cream until it’s steaming but do not let it boil.
Pour the warm cream over the chocolate and sugar and allow to melt, stirring occasionally until you have a smooth, silky liquid. Using a clean bowl and electric whisk, whip the egg whites to stiff peaks. Then whisk the egg yolks into the chocolate mix then the reserved blackberry puree.
Carefully fold the egg whites into the chocolate mix, continuing until there are no lumps of egg white remaining. Divide the reserved blackberries between 4 glasses, cut them up if they’re large.
Spoon the chocolate mixture on top then refrigerate. To create the graveyard, use the icing tube to spell R.I.P. on each biscuit then put the Oreos in a zip-lock bag and bash with a rolling pin, smashing them so they look like soil.
In a bowl mash the coconut with a drip or two of green food colouring to make ‘grass’. Poke a biscuit gravestone into each mousse then surround it with a layer of chocolate soil. Scatter a little coconut grass and finish with a flower decoration.
Note: If the cream isn’t quite warm enough to melt the chocolate completely, set the bowl over a saucepan or bowl of steaming water to warm it slightly and any remaining lumps will melt. Don’t be tempted to overheat it, the cream or chocolate may split leaving you with an oily mixture rather than a smooth glossy mousse. If you can’t find chocolate filled Oreos to make your ‘soil’, use standard ones but scrape the white filling off before you crush them.
